Lentil Quinoa Stuffing

Hey, remember that Thanksgiving when I made my own Bren-friendly stuffing and then I told you I would tell you how I did it? And remember that time I actually posted the recipe within a month of saying so? Wasn't that rad?

And away we go...

Ingredients:
Quinoa
Lentils
Celery
White onion
Butter or butter-like substance (vegetable broth works, too)
Your seasonings of choice (rosemary, etc.)

You'll need about half a cup of lentils and half a cup of quinoa per person. This recipe is for one person, thus you'll need to multiply accordingly.

First, soak the lentils and quinoa for about 30 minutes to an hour. Put twice as much water as grains (2:1) otherwise you'll burn them. I did the two grains together, in the pot I would later use to cook them, mostly because I'm lazy and because it saved me having to clean more dishes, but also because we were cooking 80 things at once and it was the only pot available.

After you've soaked them, bring them to a boil. Once the water is boiling, let it go for a minute-ish, then put on low heat and cover them. Stir every 10 to 15 minutes for about 30/45-ish minutes until the quinoa pops and the lentils are soft. Take them off the heat and stir until they are gooey.

Chop half an onion and about three celery stalks.

In another pot (or just steal some from the regular stuffing your Mama is making like I did), simmer the onion and celery in butter until the butter is runny and the veggies are soft.

Mix it all together and throw in some seasoning. We used rosemary, sage, and garlic.

Voila!

A Bren-Friendly Thanksgiving

In recent years, I've either avoided Thanksgiving or eaten alternative food options. However this year, I was in Texas with my family, where most of my food experimenting happens, so we concocted some recipes for me that closely resembled what the rest of my family was enjoying.

Here is what the rest of my family ate.

And my Bren-friendly versions.

We even came up with a new apple pie recipe!

Can you tell which one is which?

I will post recipes for my stuffing and pie soon! I also ate turkey, baked sweet potatoes, green beans, and fruit.

Happy Thanksgiving!

Egg Mcmuffin

Made for me by my bestie:

12 egg whites
1 cup Oatmeal
1 cup tomato sauce (or. in my case, freshly chopped tomato)
1/3 cup shredded cheese (nut cheese for me, obviously)
3 cups (ish) fresh baby spinach

Season with oregno, basil, pepper...to taste

Combine all ingredients. Spray muffin tin, and spoon mixture into cups. Bake @ 375 for 25 minutes.

According to her: "Very simple, and easy to do substituting. The only downfall is the taste without the concentrated tomato sauce, perhaps there's something else you can add? Also, if you're looking for more protein and taste, I'm sure you could use the entire egg instead of whites only: this is a non-fat version. Maybe you could add chunks of avocado, too! It's simple enough, it's worth experimenting with."

I thought it tasted great. Clearly, she doesn't eat what I do, regularly.

Thanks, Friend!

Whatever I Feel Like, Gah!

A few people have asked why I haven't been posting recipes. Well, I haven't made anything new in a long time. Partly because I'm lazy, partly because I live with a chef who cooks for me, and largely because I got tired of if.

I make the same things repeatedly and eat large quantities of raw veggies, so there's not much to report.

These are pretty standard meals for me:

Turkey, corn, & broccolini

Quinoa, broccolini, & chicken with red onions & garlic

Egg whites with avocado and tomato

Lettuce with hummus, tomato, black beans, & onions

Quinoa, carrots, zucchini, & bell pepper

Bren tested, Doctor approved

I avoided Thanksgiving so it didn't seem right to avoid Christmas, as well. I had grand intentions to try to make some sort of pie or holiday cookies, but then I got horribly sick and lost all motivation. Maybe next year...

I did, however get to enjoy some approved snack items like:

Rosemary chicken(lovingly prepared for me by a friend) to compliment the BBQ chicken everyone else was having

and almond cheese & oat crackers to go along with the cheese & cracker tray

and guacamole I made from scratch

One of my resolutions is to create and try more recipes this year. My sister helped get that ball rolling by giving me this for Christmas:

I'm curious WHAT is actually in these deserts, so we shall see. Stay tuned!

I'm plum awesome

My new job, in addition to being awesome, had the added bonus of having an extremely fecund plum tree.

Not that I'm really allowed to eat them, but hating to see them go to waste, I decided to try to make something with them. I'd vowed to come up with a pie recipe and it's been on my mind alot, so...

Crust:
3c almond meal
1/2ts sea salt
1/2ts baking powder
1/2c grapeseed oil
4tbsp Greek yogurt
1ts vanilla extract

Combine ingredients and press into bottom and onto sides of dish.

Bake at 325 for 10 minutes

Filling:
Green apple
5 large or 7ish medium sized plums
1/2 lemon
1/3c oat flour

Cut green apple and put it on a plate/dish/etc. with the bottom covered in water. Pop it in the oven for 5-10 minutes on 325.

Skin and cut apple into chunks.
Cut up plums.
In a bowl, combine fruit, squeeze juice from 1/2 lemon, add oat flour.

Stir well and pour into crust.

Bake at 300 for 5-10 minutes.

Voila!

Damn, it feels good to be a gangsta!
